Italian Sausages with Winter Squash
Yield: 3-4 servings
Ingredients:
- 1 lb Italian sausage
- 1 acorn squash
- 1 red onion, sliced
- 2-3 tablespoons avocado oil
- 5 fresh sage leaves, chopped
- salt and pepper
- Parmesan cheese (omit for Whole 30)
- green onion or parsley
Directions:
- Preheat oven to 475° F.
- Cut acorn squash into 1/4 inch slices.
- Coat squash and onion slices with oil.
- Salt and pepper.
- Add sage leaves.
- Add sausages to the pan.
- Roast for 15 minutes.
- Sprinkle cheese.
- Broil for 3 minutes or until cheese and sausages are browned.
